Yabukita
The dominant Japanese cultivar by planted area, selected for cold hardiness, yield and a reliable balance of aroma and umami. Its ubiquity is the reason so much Japanese green tea tastes recognisably related.
Where it sits in the botany
Yabukita is recorded under Camellia sinensis var. sinensis, the variety group one level above cultivar. It is associated with Japan, which is where it was selected or is most widely planted rather than the only place it grows.

Where it came from
Selected in Shizuoka in the early twentieth century and propagated nationally from the 1950s onward.
How firm this is: Inferred rather than taken from a primary breeding or registration record. Dates and attribution for Yabukita’s selection are widely repeated but were not verified against a primary source in this sprint.
What the plant is like
Balanced rather than distinctive: a dependable base for sencha, which is precisely why it was planted so widely.
Why a grower plants it
Yield, hardiness, when it buds, what it resists and whether a machine can cut it. This is the half of a cultivar’s identity that decides what is actually in the ground, and it is usually left out of writing aimed at drinkers.
Yabukita was planted for the reasons a farm cares about rather than for the reasons a drinker does. It is cold-hardy enough for Shizuoka and for the colder prefectures north of it, vigorous, high-yielding, and it buds in the middle of the season — which sounds unremarkable until you notice that a mid-season cultivar sets the date the whole factory is built around. Its shoots grow evenly enough to be cut by machine without a large share of stem and old leaf in the load, and mechanical harvesting is what made post-war Japanese tea economically possible at the scale it reached. Its weaknesses are equally well known: it is susceptible to anthracnose and to grey blight, and its uniformity means a single frost event or a single pest pressure hits an enormous share of the national crop at once.
How much of it is planted
Conventionally given as around 70 per cent of Japan's planted tea area — a share that has been slowly falling for years as prefectures diversify, and that varies enormously by prefecture: far higher in Shizuoka than in Kagoshima, where Yutakamidori and Saemidori take a large part of the ground.
How firm this is: Inferred rather than taken from a primary breeding or registration record. The figure is quoted almost universally and sourced almost nowhere, and different quotations use different denominators — national planted area, one prefecture's area, or one category's production. Recorded here as an order of magnitude with the denominator stated, not as a current measurement. It was not verified against a Japanese agricultural statistics release in this sprint.
What it does in the cup
A middle. Grassy and vegetal with moderate umami, moderate astringency and no trait that announces itself — which is the point, because it takes shading, deep steaming, roasting and blending without any of them fighting a strong cultivar character. Cultivars bred since are routinely described against it: Saemidori as sweeter, Yutakamidori as thicker under shade, Okumidori as later and greener, Sayamakaori as more astringent and more aromatic.
How much of this is really the cultivar?
Very little of what a drinker notices about a Japanese green tea is Yabukita. Steaming depth alone separates a light asamushi from a deep fukamushi far more audibly than any two cultivars separate from each other, and shading, harvest date, fertiliser regime and finishing fire each move the cup further than the plant does. The useful way to read Yabukita on a label is as the absence of a deliberate cultivar choice rather than as a flavour promise — and, in a single-cultivar tea from a producer who did choose, as the baseline the other cultivar is being contrasted with.
Cultivar, growing site and processing all shape a cup, and the cultivar is very often the smallest of the three. It is also the one that fits on a label, so almost every commercial incentive runs toward overstating it.
