Zairai
Not a cultivar but the seed-grown mixed population that covered Japan before clonal planting standardised the crop on Yabukita from the 1950s onward. Zairai plots are genetically varied bush to bush, deep-rooted from seed rather than cutting, later and lower-yielding, and now rare — a few percent of the planted area. They are the Japanese equivalent of China’s Qun Ti Zhong, and are sought for the same reason: variation in the field gives a layered cup no single clone reproduces.
Where it sits in the botany
Zairai is recorded under Camellia sinensis var. sinensis, the variety group one level above cultivar. It is associated with Japan, which is where it was selected or is most widely planted rather than the only place it grows.

Where it came from
The pre-clonal seed-grown population, progressively replaced by cuttings of named cultivars from the mid-twentieth century.

What the plant is like
Variable leaf, deep taproots from seed, late budding and low yield. Frost-hardier than many named cultivars and often found on marginal or abandoned plots.
Why a grower plants it
Yield, hardiness, when it buds, what it resists and whether a machine can cut it. This is the half of a cultivar’s identity that decides what is actually in the ground, and it is usually left out of writing aimed at drinkers.
Seed-grown, so deep-rooted and genetically varied, and correspondingly late, uneven and low-yielding — which is exactly why it was replaced. Japan's post-war shift to cuttings of named cultivars bought uniform bud break, machine harvesting and a schedulable factory, and it bought them at the cost of the taproot and the variation. What survives tends to survive on marginal or semi-abandoned plots, where nobody had the capital to replant, and it is frost-hardier than much of what replaced it.
How much of it is planted
Now a small share of Japan's planted area — the figure is usually given as a few per cent — against a crop that is otherwise almost entirely clonal. The denominator is national planted area.

What it does in the cup
Reported as layered and uneven in a way a single clone does not reproduce, with more variation between lots than between cultivars. Late picking and low yield push it toward the coarser, less sweet end of Japanese green tea.
How much of this is really the cultivar?
Zairai is not a cultivar and treating it as one produces nonsense: it is whatever seed-grown material happens to be standing in a given plot, and two zairai teas have no particular reason to resemble each other. That is the honest answer, and it is also the interesting one — the complexity attributed to zairai is a blending effect occurring in the field rather than a property of a plant, which is the same argument the Chinese qun ti zhong records make independently.
Cultivar, growing site and processing all shape a cup, and the cultivar is very often the smallest of the three. It is also the one that fits on a label, so almost every commercial incentive runs toward overstating it.
