Trough withering

- Black tea — Full enzymatic oxidation of the rolled or cut leaf, halted only by firing once oxidation is complete.
What it is
A withering trough is a long shallow box with a perforated floor, a bank of fans at one end and a heater in the air path. Leaf is loaded to a set depth and air is driven up through it, so every part of the bed sees roughly the same airflow rather than the top layer drying while the bottom stays damp. Because the air can be warmed in wet weather and left ambient in dry, the operation runs to a timetable, which is what allows a factory to plan an oxidation start time and a shift pattern around it. It is the least romantic step in black tea manufacture and among the most consequential, because a bed withered unevenly cannot be made even again at any later stage.

Mostly acts by removing a source of unevenness rather than adding character; heavily heated air shortens the wither and is associated with a flatter, less aromatic result.

- Ambient-air withering
- Fans without heat, used where the climate allows. Slower, and generally held to give a better wither than a heated one of the same duration.
- Humidity-conditioned withering
- Air is dehumidified rather than heated, which removes moisture without raising leaf temperature. More expensive and increasingly used in high-value orthodox production.
- Turning the bed
- The leaf is hand-turned during the wither so the layer nearest the mesh does not dry ahead of the rest. Skipping it is a common cause of mixed intake at the roller.
Where this gets misdescribed
Because the wither is the step that removes water, it is often described as simply drying the leaf out. Moisture loss is only half of it: the hours the leaf spends limp and intact are when a large part of its aromatic character is built, which is why a wither that is merely fast produces a duller tea than a slow one that reaches the same moisture.
