When it is picked

Spring and autumn picks pressed into paper-wrapped squares while still warm — the only compressed oolong in commercial production. Compression happens immediately after processing, so the district's calendar is tied to press capacity in a way loose-leaf oolong districts are not.

Also transliterated as zhang ping. Romanisations of a district name vary by system and by vendor, and a packet spelling one way is not describing a different place.
