Shengzhou

The county that explains why Longjing is everywhere. Shengzhou sits in the old Yuezhou tea district of eastern Zhejiang, praised in Tang writing, and is today the largest producer of flat, blade-shaped green tea in China — most of it machine-pressed rather than hand-pressed against a wok wall, and most of it sold as ‘Longjing’ of one designation or another, legitimately as Zhejiang Longjing or otherwise. The county is also a major source of the roasted green leaf that goes for jasmine scenting and for export. It is the clearest case in Chinese tea of a famous name whose supply comes overwhelmingly from somewhere other than the place it is named after.

When it is picked

A hard winter dormancy and a spring the whole year is priced against. Bud break comes as the cold releases; the pre-Qingming picking is the most expensive tea of the year and the pre-Guyu picking behind it is the last that carries a real premium. From Lixia onward the leaf coarsens quickly, and the summer and autumn crops go to bulk green tea, to scenting bases or to nothing at all if labour is worth more elsewhere. The premium decays fast enough that a week of weather is a commercial event. At this scale the calendar is an industrial constraint rather than an artisanal one: machine-pressed flat green tea is made to a schedule that runs through the spring window at volume, and the county's output is large enough that its picking weeks move the national supply of the style.
