Anji

A bamboo-forested county in northern Zhejiang whose tea industry was built on a single plant. A pale-leaved mutant bush found on Tianhuangping in the 1980s was propagated as Bai Ye Yi Hao, and its shoots emerge nearly white in cool spring weather before greening as temperatures rise. The resulting tea is a green tea despite the name Anji Bai Cha, and its unusually sweet, low-astringency character is a cultivar effect, not a processing one.
