Fuzhou

The Fujian capital, historically the great tea port of the clipper trade and still the centre of jasmine scenting. Jasmine is grown on the sandy flats along the Min river and picked in the afternoon; the flowers are held until they open after dark, layered with tea overnight and screened out at dawn, and the cycle is repeated — five, seven, nine times for the better grades. Fuzhou is a processing region rather than a growing one, and the distinction matters: the leaf usually comes from elsewhere in Fujian.

  • Jasmine green tea — Intensely floral over a soft green base. The most widely drunk scented tea in the world, and one where the gap between a well-made version and a cheap one is immediately obvious.
  • Jasmine dragon pearl — Intensely jasmine without becoming soapy, which is the difference between real scenting and added flavouring.
  • Jasmine Silver Needle — Softer and sweeter than jasmine green tea, because the white base contributes no vegetal edge for the flower to fight. The most delicate of the common jasmine teas and the easiest to over-steep into soapiness.
