Solar withering vs trough withering
The two ways moisture is taken out of fresh leaf before anything else happens, and they are not interchangeable. Sun withering raises the leaf temperature and starts aromatic development; a forced-air trough removes water on a schedule and deliberately does not.

Withering is widely described as simply drying the leaf a bit. It is two things at once — water loss and chemical change — and the two can be separated: the trough does the first without much of the second, and that is exactly the choice being made.
