How far the wither runs vs how it is carried out
Two levers a factory controls separately and that readers routinely collapse. The equipment decides how evenly and how quickly moisture leaves; the degree decides how much leaves and how long the leaf spent changing while still intact.

The short answer
If only one withering fact is available about a tea, the useful one is how far it was taken rather than what it was taken in. A hard wither and a light wither in the same trough produce more difference in the cup than the same degree of wither in two different pieces of equipment.
