Hard and light withering
How far the wither is allowed to run, which is a separate decision from how it is carried out and shapes the tea more than the equipment does.
What it is
Withering does two distinct things that are often described as one. The physical wither removes water so the leaf goes limp and can be twisted without shattering; the chemical wither is the slower change in the leaf’s composition that continues as long as the leaf is left intact and alive. A hard wither takes the leaf a long way down in moisture, is standard ahead of CTC and orthodox rotorvane lines, and produces leaf that macerates cleanly. A light wither leaves the leaf much wetter, and is characteristic of Darjeeling first flush and of many Chinese black teas, where the intention is to keep the green, floral character the longer wither would carry away. Neither is correct in the abstract; each suits a different downstream machine and a different intended cup.

What it does to the leaf
Sets both the residual moisture the leaf carries into rolling and the length of time it has spent changing while intact, which are separate levers that the same operation controls.
What it does to the cup
A long, cool, light wither is associated with floral and green top notes; a hard wither with heavier body, cleaner maceration and a more uniform, less aromatic result.
Variants that matter
Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.
- Hard wither
- Leaf taken well down in weight, commonly to somewhere near two-thirds of its fresh weight or below. Standard for CTC, which needs leaf tough enough not to smear in the rollers.
- Light wither
- A short wither retaining much more moisture, associated with Darjeeling first flush and with several Chinese black teas made for aroma rather than strength.
- Extended cool wither
- Long, low-temperature withering over more than a day, used for white tea and for some oolong, where the wither is doing most of the work of the whole process.
- Spreading fresh leaf (tan fang)
- The green-tea equivalent: intake is spread in thin layers for a few hours before kill-green to even out moisture, deliberately stopping well short of a true wither.
Where this gets misdescribed
Wither figures are quoted as though they were a quality specification, with a harder wither implied to be more thorough. They describe what the next machine needs. A leaf withered hard and then rolled orthodox gives a thin, papery tea, and a leaf withered lightly and then put through CTC rollers smears rather than granulates.

- Sieve combining (bing shai) — Part-way through a white tea wither, the contents of two or three sieves are tipped into one, thickening the bed so the last of the wither runs slower and warmer.
- Solar withering — Withering leaf outdoors under direct sun for a short, closely watched period — the opening move of oolong, of white tea and of pu-erh maocha.
- Trough withering — Withering on a mesh bed with fans forcing conditioned air through the leaf, which turns a weather-dependent step into a scheduled one.
- Withering — Controlled moisture loss that makes the leaf pliable and begins its chemical change.
