Hoshino
A mountain village inside the Yame district of Fukuoka, and the focal point for Japan’s traditional hon-gyokuro. What the designation demands is method rather than place: shading with reed screens and straw rather than cloth, and hand-plucking rather than shears, on gardens grown as individual bushes instead of a trimmed hedge. Hoshino gardens take the top places in the national tea competition’s gyokuro class with a regularity that is itself the district’s reputation, and the quantities involved are very small.

- Gyokuro — Thick and almost broth-like, with very little astringency and a sweetness that arrives before anything else. The clearest teaching case in tea for what umami actually means in a cup.
