What this gets credited for, wrongly

Any creamy floral quality in an oolong is often assumed to mean the tea has been scented or flavoured. Sometimes it does. Often it is the leaf's own chemistry, and the two are distinguishable by whether a flower ever touched the leaf, not by the note itself.

What it is

Jasmine lactone is one of the compounds that makes jasmine smell like jasmine, and it has a soft, creamy, peach-like quality alongside the floral. It reaches tea by two routes, and telling them apart matters commercially. In jasmine tea it is transferred from living flowers during scenting, over repeated nights of the flowers opening against the leaf. In some oolongs it is the plant's own, developed during bruising and oxidation, which is why a good Dan Cong or a well-made Tie Guan Yin can smell floral in a way that has nothing to do with added flowers.

Where it occurs in the plant

Present at low level in tea leaf and developed during processing; present abundantly in Jasminum sambac flowers, which is the basis of scenting.

What processing does to it

In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.

Metering a flavouring preparation onto finished dry tea adds nothing to the leaf's own aroma chemistry, and that is the entire distinction between a scented tea and a flavoured one. A flavoured jasmine tea's fragrance is not this compound arriving from a flower over several nights; it is a preparation applied in an afternoon. Both can smell good and only one is what the name has historically meant, which is why the two are worth being able to tell apart on a shelf.

How brewing brings it out

Extraction rate: Moderate

Moderately volatile and reasonably water-soluble, so it stays in the cup better than the monoterpenes do and survives into a cooled liquor.

Across infusions: Persists past the first infusion, which is why a well-scented jasmine tea is worth brewing more than once and a lightly flavoured one is not.

Leaf, ratio and agitation: Holds up better than the free terpenoids across a long steep because it is not lost to the steam in the same way, so it survives western brewing where more delicate florals do not.

Where this gets misdescribed

That jasmine tea is tea with dried jasmine flowers in it. Proper scenting uses living flowers that are then removed; the flowers visible in a cheap jasmine tea are usually decoration on a tea that was flavoured another way.
