What a drinker notices

Roasted, nutty, toasted, popcorn-like, and at higher roast levels caramel and cocoa. It is a family of related notes rather than one, and which of them dominates depends on the roasting temperature and how long it was held.

How much of it there is matters: Pleasantly toasty across a wide band and then abruptly burnt. The line between a well-roasted oolong and a scorched one is narrow and is not recoverable.

What this gets credited for, wrongly

The nutty character of genmaicha is usually credited to the roasted rice, and the rice does contribute. The tea itself, if it is bancha that has been fired hard, is contributing the same class of compound.

What it is

No amount of careful growing puts a pyrazine in a tea leaf. They are made, by heat, from the leaf's own sugars and amino acids reacting together in the same browning chemistry that produces the smell of bread crust, roasted coffee and seared meat. That is why hojicha smells of caramel and toast when the sencha it was made from smelled of grass, and why a charcoal-roasted Tie Guan Yin bears little resemblance to a green one from the same cultivar. Roasting is not a way of preserving a tea's character; it is a way of exchanging one set of compounds for another, and this group is what is bought with the trade.

Chemically: Nitrogen heterocycles formed by Maillard reaction between sugars and amino acids.

Where it occurs in the plant

Absent from fresh leaf entirely. Every pyrazine in a finished tea was made during firing, roasting or baking, from precursors the leaf supplied.

What processing does to it

In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.

RoastingCreates it
The defining step. Sugars and amino acids react under heat and this group appears; the higher and longer the roast, the further the profile moves from nutty towards caramel and then towards burnt.
Hojicha roastingCreates it
Hojicha is the clearest case in tea of the exchange being deliberate and total. A green tea is roasted until almost nothing of its original aroma remains and this group has replaced it.
Charcoal roastingCreates it
Slow charcoal roasting builds them gradually and unevenly, which is the argument for the technique over an oven: the profile is more complex because the heat is less uniform.
Final firing (hiire)Raises it
Even the gentle final firing of a sencha makes a little, which is part of the difference between a freshly fired tea and the same leaf unfired.
Flat shapingCreates it
In Chinese green tea the shaping IS the firing, which is the fact worth taking away. Pressing leaf flat by hand against the wall of a heated wok holds it against hot metal for as long as the hand stays there, and the toasted-chestnut register of a Longjing is built during shaping rather than in any later step.
Needle shaping (li tiao)Creates it
Shaking fixed leaf along heated grooves keeps it in continuous contact with a hot surface for the length of the shaping, so a needle-shaped green tea is toastier than the same leaf shaped cold. The shape and the smell are bought together.
Curling and down-raising (cuo tuan xian hao)Creates it
Rubbing hot leaf between the palms into balls and breaking them apart repeatedly keeps the reaction running through the shaping, though far more gently than a wok face does. It is a small contribution and it is the difference between a curled tea and a flat-dried one from the same pan.
Drum fixationCreates it
Tumbling contact with a hot cylinder wall browns the leaf surface slightly even when the fixation itself is well judged, so a drum-fixed green tea carries a faint toasted note that a steamed one does not. It is one of the quiet reasons Chinese and Japanese greens smell different before any other difference is reached.
Pearl forming (chao gan cheng yuan)Creates it
Successive pans hold the leaf against hot metal for far longer than any drying does, and the Maillard chemistry that needs that contact is what puts the toasted, faintly smoky edge on a gunpowder. It is the same reaction as a roast, arriving through an operation filed as shaping.

How brewing brings it out

Extraction rate: Fast — among the first things out of the leaf

Volatile and readily extracted, so roasted teas give up their aroma quickly and generously. It is why hojicha can be brewed with boiling water without penalty — the compounds that would have punished that treatment are gone.

Across infusions: Front-loaded and quick to fade, which is why roasted teas are often best over fewer infusions than the unroasted original.

Water: Reasonably water-soluble for aroma compounds, so the roast character of a hojicha or a charcoal-roasted oolong holds up in hard water where a delicate floral would not. This is part of why roasted teas travel better into a mug.

Leaf, ratio and agitation: Concentration-tolerant. A heavy hand with a roasted tea reads as more roasted rather than as harsh, which is not true of the catechin side of the cup.

What you can change

  • Use boiling water without hesitation on roasted styles
  • Brew promptly and drink hot
  • Expect fewer good infusions than from an unroasted tea

Where this gets misdescribed

That roasting deepens a tea's existing character. It replaces part of it. The floral top of an oolong is consumed to make roast aroma, and a heavily roasted tea cannot be un-roasted back towards what it was.
