Electric baking
Roasting in a temperature-controlled electric oven rather than over charcoal.
What it is
The dominant modern method, and recorded separately because the difference from charcoal is real without being simply worse. Electric baking is precisely controllable, repeatable batch to batch and far cheaper in labour, which is why almost all commercial roasting uses it. What it does not reproduce is the slow radiant character and the trace smoke of charcoal work, and at higher roast levels experienced drinkers can usually tell them apart.

Applies controlled convective and radiant heat at a set temperature, driving moisture off and developing roast character predictably.
What it does to the cup
Cleaner and more uniform than charcoal, with less depth at heavy roast levels and less batch-to-batch variation.

- Finishing bake
- A short low-temperature bake used simply to remove moisture before packing, not intended to add roast character.
Other steps at the Roasting stage
- Charcoal roasting — Slow roasting over charcoal in baskets, in repeated sessions separated by weeks of resting.
- Final firing (hiire) — The last heat a Japanese green tea receives, applied at the refiner rather than the grower, and the lever that decides whether a sencha reads as fresh and grassy or sweet and toasted.
- Hojicha roasting — A short, hot roast applied to finished Japanese green tea, which converts it into a categorically different drink in minutes.
- Re-firing — A light low-temperature bake applied to already-finished tea to drive off absorbed moisture.
- Resting between roasts (tui huo) — Weeks or months of doing nothing between one roast and the next, during which the raw fire note recedes and the maker finds out what the roast actually did.
- Roasting — Applying sustained heat to finished leaf to build toasted character, reduce moisture and stabilise the tea for keeping.
