    Temperature

    Check: Did you pour water straight from a boiling kettle, or from a kettle without a temperature setting?

    Fix: Let boiled water stand for three to five minutes before pouring, or add a splash of cold water. Most green teas want 70-80 °C; shaded Japanese greens want considerably less. This single change fixes the majority of bitter green tea.

    Over-extraction

    Check: Was the leaf in the water for more than about two minutes?

    Fix: Shorten the steep and taste as you go. Bitterness builds faster than sweetness, so a shorter steep loses less than you would expect.

    Check: Did you leave the leaf in the pot and pour a second cup later?

    Fix: Separate the leaf from the water when the steep is done — strain it out, lift the basket, or pour the pot off completely. A pot left standing is still brewing.

    Check: Did you use noticeably more than a teaspoon of leaf per mug?

    Fix: Reduce the leaf. Note that teaspoons are a poor measure for tea — leaf density varies enormously between a fluffy white tea and a tightly rolled oolong — so weigh it if you can.

    Check: Is the unpleasantness a taste on the tongue, or a rough, drying feeling across the whole mouth?

    Fix: If it is drying rather than bitter, you are dealing with astringency: polyphenols binding to proteins in saliva. Lowering temperature helps, but so does gentler handling — avoid stirring or agitating the leaf, and consider that broken or dusty leaf grades extract far more astringency than whole leaf.

    Fix: Try filtered water. Hard water flattens green tea noticeably and can produce a dull, slightly metallic cup. This is a real effect, though a smaller one than temperature.
