What a drinker notices

Smoke, tar, campfire and at lower levels a sweetish woodiness closer to bacon or smoked wood than to burning. A traditional Tongmu smoked souchong carries it in balance with longan and pine resin notes; an industrial one carries it alone.
How much of it there is matters: The compound that most divides opinion in tea. There is no level at which everyone finds it pleasant, and the honest statement is that this is a preference rather than a quality gradient.
What this gets credited for, wrongly
Smokiness in a pu-erh or a sheng cake is often assumed to be deliberate smoking. Usually it is not: it is incidental, picked up from a wood-fired pan or an ill-ventilated drying room, and it is generally regarded as a fault in that context rather than a style.
What it is
Guaiacol comes from lignin, the structural polymer of wood, breaking down under heat. It is a principal component of wood smoke and it is what smoked tea smells of. Unlike almost everything else in this catalogue it is not made by the tea plant at all: it is made by burning pine and then deposited onto the leaf during drying over a smoky fire. That makes smoked tea the one category on this site whose defining compound is external, and it is a useful boundary case — a reminder that a finished tea's chemistry includes whatever the process put there.
Chemically: Methoxyphenol — a product of lignin breaking down under heat, and a principal smoke compound.
Where it occurs in the plant
Not present in tea leaf. Introduced from outside during smoke-drying, and present in related phenols that arrive alongside it from the same fire.
What processing does to it
In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.
- Pine smoking — Creates it
- The defining step. Leaf is dried over burning pine and the smoke's phenols are deposited directly onto it. The intensity is a function of the fire, the wood and the time, not of anything the leaf did.
- Charcoal roasting — Raises it
- Charcoal roasting can contribute a little of it incidentally, which is part of why a heavily charcoal-fired oolong sometimes reads faintly smoky when no smoking was intended.
How brewing brings it out
Extraction rate: Fast — among the first things out of the leaf
Volatile and readily extracted at any temperature. Smoked teas give it up immediately and generously, which is why they are so often used in small proportion in a blend.
Across infusions: Front-loaded but persistent — a smoked tea remains smoky for many infusions, long after everything else has gone.
Water: Not water-sensitive in any useful sense. It is the smoke note of a lapsang or a pine-fired dark tea and it survives whatever it is brewed in, which is exactly the complaint people have about it.
What you can change
- Brew shorter and cooler if the smoke dominates
- Blend a small amount into an unsmoked tea rather than brewing it weak
- Store away from other teas, which take the smoke up readily
Where this gets misdescribed
That all Lapsang Souchong is smoked. The original Tongmu souchong is not necessarily heavily smoked at all, and the unsmoked style is the older and, locally, the more prized one. Heavy smoking was substantially an export adaptation.
