Wet piling vs natural ageing
The two routes by which a Yunnan leaf becomes dark, smooth and earthy, and they are routinely described as the same thing at different speeds. They are not. One is a managed factory operation lasting weeks; the other is uncontrolled change during storage lasting decades, most of it after the tea has been sold.

Why these get confused
Both are called ‘fermentation’ and both produce dark leaf, so the shorthand ‘shou is fast-aged sheng’ circulates widely. A thirty-year sheng and a three-year shou are not the same tea at different points on one line.

The short answer
Shou was developed to approximate in weeks what sheng takes decades to do, and approximate is the operative word. Anyone who has decided they dislike pu-erh on the strength of a young shou has met one of these two things and generalised from it.
