Compression vs ageing
Pressing tea into a cake and ageing tea are two different things that arrived together historically and are now assumed to be one. Compression began as a transport solution; whether a pressed tea can age at all is decided by other steps entirely.

Why these get confused
A pressed cake reads as ‘made to age’, so compressed green tea and compressed oolong get bought on that assumption. They are pressed for portioning and transport, and they will fade rather than develop.

The short answer
Compression changes the geometry of storage and nothing else. Sun drying is what leaves a leaf capable of ageing; pressing merely decides how evenly that ageing proceeds.
