What it is

Yellow tea is green tea plus one deliberate addition. After fixation the still-warm, still-damp leaf is heaped and covered — men huang, 'sealed yellowing' — for anywhere from a few hours to several days, then finished. The step is slow, easy to get wrong, and adds cost without adding yield, which is why so little is made. What it removes is the sharp vegetal note of a fresh green; what it leaves is a softer, sweeter, faintly grain-like liquor with almost no astringency. Much of what is sold as yellow tea today is green tea that has skipped the yellowing entirely.

A note on the name

Genuine yellow tea is scarce enough that a reader is more likely to encounter the label than the tea. Where a description mentions no yellowing or smothering step at all, the product is very likely a green tea carrying the name.

History

A tribute-tea category under the Ming and Qing dynasties and now the rarest thing in Chinese tea. Its decline has an economic explanation rather than a fashionable one: the yellowing step adds days of labour and the resulting tea sells for little more than green tea from the same leaf. Several named yellow teas lapsed entirely in the twentieth century and exist now only through deliberate revival, and a good deal of what is sold as yellow tea is made without the defining step at all.

How it is made

Green tea processing with one addition. After fixing, warm damp leaf is wrapped in cloth or paper and left to yellow — a slow non-enzymatic change that is neither oxidation nor fermentation. The step may be repeated over several days and it is judged by eye and smell rather than by any measurement, which is part of why so few producers still attempt it.

What it tastes like

What the yellowing removes is as important as what it adds: the grassy, vegetal sharpness of green tea largely disappears, leaving a mellow, sweet, grain-like cup with almost no astringency. The result tolerates warmer water than green tea from the same leaf, because the character that cooler brewing was protecting has already gone.
