Aluminium
The tea plant is one of the few crops that accumulates aluminium, and most of what it accumulates never reaches the cup.
What a drinker notices
- Nothing a drinker can detect — not perceptible
Nothing detectable. No taste, no aroma, no colour, no texture — nothing in a cup indicates it, which is why it is a laboratory subject rather than a tasting one.
What it is
Camellia sinensis is an aluminium accumulator — one of a small number of plants that take the element up and store it in their leaves rather than excluding it, and part of why the plant tolerates acid soils that many crops cannot. As with fluoride, accumulation rises with leaf age, so coarse material carries more. What separates it from fluoride is extraction: a large share of the aluminium in tea leaf is held in association with the polyphenols and does not enter the infusion, so the amount in the leaf and the amount in the cup are quite different numbers. That distinction is compositional and is the reason a leaf figure cannot be read as a cup figure.
Chemically: Inorganic element accumulated from soil; tea is an unusually strong accumulator.
Where it occurs in the plant
Taken up from acid soils and accumulated in the leaf, rising with leaf age. Old leaf and stem carry substantially more than bud-and-first-leaf material.
What processing does to it
In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.
- Plucking standard — Lowers it
- A finer plucking standard carries markedly less, for the same reason as fluoride: the accumulation is a function of how long the leaf has been on the plant.
How brewing brings it out
Extraction rate: Variable — only partly extracted
Only partly extracted, and the fraction that transfers is limited by association with the leaf's polyphenols. Hotter and longer brewing raises it, but the leaf figure and the liquor figure are not interchangeable and treating them as such is the standard error here.
Across infusions: Distributed across infusions rather than front-loaded, consistent with a partly bound species.
Water: Acidity is the variable. Aluminium is more soluble in acid conditions, so the pH of the water and anything acidic added to the cup sit upstream of how much comes across. Aluminium cookware is a separate and much-discussed source that has nothing to do with the leaf.
Leaf, ratio and agitation: Like fluoride, concentrated in older leaf, so it follows the plucking standard more closely than it follows the category. Leaf quantity moves it roughly with the dose.

Where this gets misdescribed
That a figure measured in dry leaf is a figure for what a drinker receives. For this element the two differ substantially, because much of it stays behind bound in the leaf, and quoting the leaf figure as if it were the cup figure is the commonest error in writing about it.
