Note: White teas made outside Fujian are made to white-tea principles from bushes selected for other categories, and it shows in cold water: less of the thick, hay-sweet body a Fuding white gives and more of a clean, faintly floral, faintly citrus register. Neither is a defect and the difference is a cultivar difference rather than a manufacturing one, which is exactly why the parameters are not simply the Fujian numbers reused.
