Complexity
A verdict about a tea rather than a sensation in it — recorded here so it can be told apart from the sensations.
Calling a tea complex says that several things are going on and that they change as the session goes. It is a legitimate and useful judgement, and it is not a sensation: there is nothing that detects complexity, no complexity texture, and no way to be trained on it independently of the things it is made of. This record exists because the distinction has already gone wrong in this codebase. `mouthfeelSchema` in `src/domain/vocabularies.ts` lists `complex` among texture terms, and thirty-four teas carry it there — alongside `silky`, `drying` and `full_bodied`, which are things a mouth can feel. Every one of those thirty-four also carries the `complexity` field that was designed for exactly this judgement, so the mouthfeel entry adds no information and files a verdict as a sensation. A vocabulary of sensory descriptors that simply omitted the word would leave that mistake unnameable, which is why the axis vocabulary here includes a value that means 'this is not a sensation' and why this record uses it.
