Astringency is the single most misfiled sensation in tea. It is not a taste at all. What the mouth registers is the loss of its own lubrication — saliva briefly stops doing its job — felt as a dry, rough, puckering grip on the tongue and the inside of the cheeks. Because it is a change in how the mouth feels rather than a flavour arriving, it has a different time course from any taste: it builds over successive sips, lags behind the swallow, and takes a while to clear. That is why it is the sensation people describe as furry, or as their tongue being coated. The practical consequence is that astringency and bitterness respond to different levers. Bitterness comes down with cooler water and a shorter steep. Astringency tracks leaf grade, how much the leaf is broken, how vigorously the water is poured, and how hard the water is — a fine broken-leaf tea poured aggressively will grip whatever the temperature.

Which sense this is

Mouthfeel. Felt rather than tasted or smelled: texture, weight, viscosity, and the drying grip of astringency, which is a physical effect in the mouth rather than a flavour.

Tactile. This is the axis assignment the whole entity exists to make, and it is not a fine distinction: nothing tastes astringency, the mouth feels its own lubrication go away. TeaHQ's numeric `sensoryProfile` already separates the two axes and says why; the named vocabulary now does the same.

Sensory primitive. A single sensation that can be isolated and trained on, independently of what the tea reminds anyone of.

Where it comes from

  • Established chemistry

    Attributed to the polyphenol content of the liquor, the catechin family above all. What the drinker registers is a change in how the mouth feels rather than a flavour arriving.

    The chemical route is identified in the literature. Often a family of related compounds rather than one named molecule.

  • Brewing variable

    Broken leaf, hard pouring and a high leaf-to-water ratio all raise it, largely independently of temperature. A tea that grips when brewed cool is telling you about its leaf grade and your pour, not your kettle.

    Produced at the drinker's end, by a brewing choice or a brewing error.

  • Processing step

    CTC and rotorvane maceration break the leaf comprehensively and produce a liquor that extracts fast and grips hard, which is what makes them suitable for tea drunk with milk.

When it is a fault, and when it is not

A fault when it dominates and does not resolve — a harsh, lingering grip that flattens everything else, usually from broken leaf, aggressive pouring or over-leafing. Not a fault as structure: Assam, young sheng and many Dan Cong are astringent by design, and a version of them without it would be thin.

  • Bitterness (Taste) — A taste, detected on the tongue, and the most frequently misfiled word in tea writing.

What gets said that is not right

That astringency is a taste, and that 'too astringent' means 'brewed too hot'. It is a tactile effect, and temperature is one of the weaker levers on it.
